Want Email client do you use? If Outlook or Outlook express use RTF fomat or HTML and drag and drop your gif into your message. There are a few good outlook addins to automate this.

If not simply put in some HTML code like in the text signature manager in outlook and give that a whirl

Be careful handing out your signature so easily online..
