Michael Gerber has many things on his site to help with this. Yes, you have to put everything in writing which is a job in it self. I policy book is recommended.
And for all business their is a great old book that everyone should have and it is a money marker for the business man or women. It is my favorite business book: Elmer Wheeler's "Tested Sentences" You can get a free chapter at:
