![]() for ME, a person with gut problems.
Old timers know I'm an experimental cook and baker, more flops than winners but I get lucky once in awhile. My bean ice cream wasn't bad. My cookie quest: No wheat flour, no gluten, no salt, no sugar added, no dairy, no nuts. Sounds like an awful cookie in the making. But, I'm close. Somewhere between the Italian classic biscotti and the Jewish Mandel Bread, and Hawaiian fruitbread... is the sweet spot. I like the hard dunking cookie, like biscotti or simple sugar cookie, but, NO sugar allowed. A couple of years ago, I wrote about my muffins, and Glenn Osborn is a known muffin aficionado. I also developed a 2 min. microwave version, which, when cut, and toasted came out like a cookie. And there were the pan cookies too. Anyhow, a breakfast cookie, a lunch muffin, afternoon snack...all tasty and healthy is what I'm after. So, if you have any decent recipes and like to experiment in the kitchen, just keep these guidelines in mind, OK? No wheat flour. No gluten. No dairy, including eggs, milk, cream or butter. No nuts. No Sugar. No Salt. Then let me know, we can exchange recipes. I'm also trying to use known "super foods" (not sure that is a real thing)...but some foods have a decent reputation, like blueberries, kale, etc. Gordon Jay |

I'm working on "perfect" cookie (no nuts, a good guideline, has me stumped right now) but I'm no quitter and will keep baking cookies! |

Give me the day and I'll try to find the thread if it hasn't been deleted. Every couple of years I prune my posts and archive them, it could be in there. I've created a faux peanut, roasted lentils in pnut oil, which I sometimes use in pnut butter cookies...or a brown rice fried in pnut oil, and baked dry... I can use this recipe as a base, so thanks for your efforts...when you add in the elimination of nuts and...dairy, (IF I can)... then the quest seems to be Quixotic. Alas, this windmill could be the siren which wrecks my ship. Or, NUTS, foiled again ! HA! Gordon |

![]() OK, here's the next one - Potato roses - I'll just bet that you could find loads of foods to interleave between the potatoes to add different flavours

![]() There's another recipe on the BBC website which includes an egg and some salt, but no added sugar.
Based on chick peas and carrots, it does sound lovely. Maybe you could adjust it .... less salt .... and one egg divided between 12+ portions doesn't sound too bad. I hope, anyway! Margaret tut, I forgot the link! http://www.bbc.co.uk/food/recipes/nu...rrot_and_32952

two quick questions Gordon (and all) are you able to tolerate quinoa? have read various opinions (not on whether YOU could tolerate them but eating seeds in general with diverticulitis/losis) and about sugar? processed sugar or no agave, pineapple juice, etc.? on a related note, I ride the metro bus to work downtown and there is a young man that sells cookies (and sells out EVERYDAY), wrapped two together, out of a tupperware container. so he's picking up $20 -30 dollars riding bus. |

I'm not a quinoa fan but do like ground flaxseed...as for Diverticulosis, it is a person to person thing, once had a doctor tell me to go ahead with Strawberries, yet, know 2 people hospitalized for taking that advice... Gout was a real pain, but worst pain was my bout when I had to be hospitalized when the diverticulitis flared up, worse than a heart attack, being stabbed, getting my nose and other bones broken... Diverticulitus...had me crying like a little baby who hadn't been fed in days, so I don't risk experimenting. I use fresh fruit (small amounts) to get some sugar (sweetness) in the cookies and muffins, like blueberries, chopped raisins, and apples. Mostly apples. We have a place called Quaker Square, where Quaker Oats used to be stored and processed, for 3 decades they had a cookie store with the best Oatmeal cookies anywhere, NOT healthy, but back then, who cared? I once made 1000 bux at a Flea Market selling Giant Chocolate Chip cookies, so there is a big market for sweets, no doubt. Be back later with some more info.
