My feeling is that there's no reason why you can't do both and offer the electronic version for a slightly lower price (manufacturing costs, and all). I gather from your post that your 'binder' option would offer a copy of the handwritten manuscript. Unless the handwriting is impeccible, I'd think twice about it. Have it typeset (just my opinion). Here's an option - make a copy of the handwritten manuscript available as a bonus with the print version (Added Value = Higher Profits). You'll offer your customers the benefits of the information in an easily readable typeset form AND the impact of the original charts, etc. in the manuscript. Oh, and when will it be for sale?
