I was wondering, if you're using the "puppy dog" technique, do you have to ask them to sign something?

I guess I'm wondering if there's ever a problem of people saying "I don't know what you're talking about", and pretending that they didn't get anything from you, and won't pay for it either.... I presume they have to sign some kind of agreement, is that right?
